Basically, you can use Ezio outfit from level 1 to level 50 without upgrading it. When you acquire higher armor or weapon just change the skin for that within the inventory as I've mentioned. EDIT #2: Here it is how it looks like. As you can see, I have different armor in those boxes, but still wearing Ezio outfit.

Yet, I think this is true for most players with higher levels and lots of gears, it's really tedious to change gear set piece by piece. For example, when I'm planning to clear a fort, I'd prefer a stealthy approach, so I pick up my assassin perk gears. however, if I run into a merc who wants my head, I have to pause and change to my warrior gear.

Indeed. There isn't a way to unequip stuff at the moment, but this is a common complaint. If Ubisoft have any brains, they'll do something about it. There's no way to ever complete the game fully unarmored, because you're forced to buy those greaves, but you can complete it with minimal armor by just never buying any.
